Low Carb Mac and Cheese made with Cauliflower.

INGREDIENTS

  • 8 Cups of Cauliflower Florets

  • 1 Tablespoon of Butter

  • 2 Teaspoons of Olive Oil

  • 1/4 Cup of Minced Onions

  • 3 Tablespoon of Almond Flower

  • 2 Cups of Fat Free Milk

  • 2 Cups of Sharp Cheddar

  • 1/2 Teaspoon of Table Salt

INSTRUCTIONS

  1. Preheat Oven to 400ºF

  2. Bring a pot of water to boil and add your cauliflower florets. Cook until fork tender. Drain and set aside.

  3. In a heated non-stick skillet melt butter and heat oil, cook onions until translucent

  4. Add your flour and stir to make the roux

  5. Add milk and stir until the milk and roux are fully incorporated with each other

  6. Slowly add cheese and mix until melted

  7. In a baking dish, fold your cauliflower and cheese mixture together

  8. Bake for 15-20 minutes

NOTE

  • Add Cheese over the top of the dish and broil for 5 minutes before serving

  • Add Keto bread crumbs over top for more texture

  • Recipe calls for 2 cups of sharp cheddar but you can adjust to your preferences
